SACRED SEED
The chan or chia seeds is one of the sacred seeds of Mayan civilizations. The Mayans mixed it with water and lemons and consumed it in gourds. Lemonade and chan is still a popular drink found at many Lake Atitlan Guatemala restaurants. It also has high vitamin, mineral and antioxidant content.
“Our drinks and flavors are part of our identity,” says Antoinette Lima (Guatemalan woman). The origins of many flavors come from the time of the Maya, who prepared “ceremonial” drinks such as cocoa, atole and pinoles.
“I love adding Chan seed to my fresh limonade”, says Anita Cortez, chef and instructor at the Lake Atitlan Guatemala Cooking Class.
“Chocolate is one of the most ancient; was a real drink of the Maya, “explains historian Osberto Gomez.
